I wonder if it's as simple as this: by Tolkien's own programmatic statement,
stories if Faërie are, when looked at closely, really stories of mortals in
Faërie. Beren and Túrin are mortals; and so it may be no coďncidence that
their stories are the most developed. I.e. Tolkien found it difficult to
write of Faërie for its own sake: it only became truly interesting to him and
worth elaborating upon when a mortal journeyed into it and had dealings with
the Elves.
Also, in Unfinished Tales the two stories which deal
with the First Age (i.e. the ones which Tolkien devoted most time to after
The Lord of the Rings) are those of Túor and Túrin. Again, when he
worked on the First Age, mortals' tales drew his
interest.
