to let the air in, I suppose the barrels would or could stay bung-hole-side up (that is, dwarf-side down) most of the time in the water, wouldn't they? At least, it seems possible to me. And dwarves are made of the stuff of the earth, so maybe they don't need as rich an oxygen mix as Man-like critters would.
