is especially associated with the West Country of England; particularly the
counties of Cornwall, Devon and Somerset. I remember having clotted cream and
raspberry jam on scones in the Scilly Isles years ago, which is even further
west than Cornwall. Delicious! It's made by heating cream to close to boiling
point and keeping it at that temperature for 30 minutes or so. It goes thick
and crusty and quite delicious.
Cream from Channel Island cows is is commonly used (Jersey and Guernsey
mainly).
It goes back a long way: at least 1,000 years in Devon.
Cream teas evoke comfort and tradition. I'm reminded of "The Old Vicarage,
Grandchester" by Rupert Brooke, redolent with nostalgia and wistful memories,
with its famous last lines:
"Stands the Church clock at ten to three?
And is there honey still for
tea?"
