Yes, it has always seemed odd to me too that Gimli was so attracted to Galadriel's beauty, when it must have been so different from Dwarvish standards of beauty.  I posted something on this long ago, and someone said that maybe he was reacting to her spiritual beauty, and that influenced how he saw her.  But that isn't how the scene reads.  Hmm...
